Ok, so it's not actually
in
San Miguel de Allende, but just outside of San Miguel -- on the Mexico City - Queretaro Freeway -- in
San Juan del Rio
, you will find tons of restaurants serving up carnitas and barbacoa, local specialties.
Barbacoa
can be a variety of different meats but at Barbacoa Santiago, the barbacoa is made from sheep. Here it is served soft and flavorful, wrapped in maguey leaves and cooked underground, the way it should be. Folks from Mexico City who know stop at Santiago Barbacoa (check out the picture here). Those who are not so up to date on culinary gossip might stop at the other nearby barbacoa restaurants -- which may be ok, but this is the classic spot for great barbacoa.
