Roaring Fork is an American Western Bistro that is the life's work of Chef Robert McGrath, who was the recipient of the James Beard Award-Best Chef in America in 2001. What is American Western Cuisine? It is a combination of using foods that are indigenous to the American West, locally grown ingredients, and capturing the 'Spirit' of the western part of the United States that the pioneers before us exibited. When designing the restaurant, Chef Robert McGrath wanted a comfortable, laid back enviroment that is hospitable and provides friendly professional service and good food. He pays a great deal of attention to all the ingredients in creating the recipes and always using foods that are found in the American West,including lacally grown produce. Western cuisine is not a ceremony; it's a celebration! The robust flavors and the courage to try something different is what we are all about. We would like to invite everyone to experience our 'spirit' while enjoying our food and hospitality.
