| Cajuns are known for their music and food. The food is almost always spicy and usually makes use of regional crops. Some of the more popular dishes include jambalaya, gumbo, boudin (a pork and rice sausage), boiled crawfish, and seafood etouffee and bisque. Cajun music, otherwise called Zydeco, can be lively and/or melancholy use their traditional instruments of the fiddle and the accordion. Like the spoken language of the Cajuns, the lyrics of their songs are part French, part English. |
