Lafayette is located in the center of the eight-parish area known as Acadiana and is home to the Cajuns. It is part of the official "Cajun Country," which covers 22 parishes and extends from the Louisiana coast north to just south of Alexandria. Cajuns are known for their music and food. The food is almost always spicy and usually makes use of regional crops, like sugarcane, soybeans and rice. Some of the more popular dishes include jambalaya, gumbo, boudin (a pork and rice sausage), boiled crawfish and crawfish etouffee and bisque. Cajun music and its sister sound, Zydeco, are unique to the area and use traditional instruments like the fiddle and accordion. Like the spoken language of the Cajuns, the lyrics of their songs are part French, part English.
